With humble beginnings as a food truck, the brick-and-mortar space in Colorado Springs launched with a unique urban design featuring bold colors and statements that are reflected in its cuisine.

 

Piglatin features a Latin American menu with a plot twist, think quesadilla meets kimchi, nachos with a Caribbean flair, and even Latin spins on classic cocktails.

 

As a featured guest on the Food Network’s Diners, Drive-Ins, and Dives hosted by Guy Fieri, the Cocina’s opening drew the imagination of the community and was awarded 5 “best of” awards from the Indy magazine in its first year and has continued to take home awards every year since.
